Horny Pig the name celebrates where we live on the Jurassic Coast of Dorset once teeming with dinosaurs. Horny Pig may not have been among them at that time but with its little trotters and horns on its wee head this artiodactylic enteldodont ancestor of today's pigs is our fave dino-ette and our special mascot.
Horny Pig rub doesn't owe any other rub its inspiration. The recipe came from our own heads and our own kitchen and got the go-ahead from our friend Sam at Jurassic Coast butchers that hallowed hall of meat on the Wareham road from Dorchester. This is the Spice Shed so Horny Pig has generous amounts of our favourite spices for your pork-friendly flavour experience. Earthy cumin is teamed with orangey ground coriander seeds blended with smoked paprika and aniseedy ground fennel seeds we use just like a Sicilian would in salsiccie or a Tuscan with their porchetta. More warmth comes from cracked black pepper and Indian scarlet chilli flake. Greek cooking loves mustard with pork and so do we so we use it with a touch of fiery aromatic Nigerian ginger because they're besties.
Dry-rub for pork butt, pork shoulder, pulled pork, chops and tenderloin. Use generously and work in really well if you're dry-rubbing. To make a coating to brush on or massage into the meat mix Horny Pig with olive or vegetable oil and fruit juice - orange juice is really great here or pressed pineapple juice. Save some for brushing onto the meat as you cook.
