‘Midnight Sun’ takes inspiration from the wild Nordic regions where daylight ventures through the night. This bottled phenomenon combines hand-picked seaberries and elderberries with the creative use of kelp and pine to give a new perspective on complex flavour combinations.
TASTE: A delicate combination of floral elderflower and fresh pine with a hint of berry sweetness and herbaceous dill on the nose.
Sweet yet complex berry flavours on the palate with a faint hint of salinity from kelp and samphire. Floral notes from elderflower and resinous pine provide a full spectrum of flavour.
The finish is long and lingering with sweetness making way for elderberry tartness, dryness from sage and pine and lasting sense of the sea from the subtle flavours of kelp.
HOW WE DRINK IT: Fill a highball with ice, add 50ml of 'Midnight Sun', top up with a light tonic water, stir, and garnish with mint leaf and a raspberry.
