Spend the day foraging and learning a new way of cooking with the amazing flavours of wild food. Courses available through the year.
Spend the day foraging for seasonal delights with our experts, then sit down to cook your very own meals, learning how to best use wild flavours and keep wild food fresh into the seasons beyond.
The perfect gift of lovers of the outdoors, hiking, nature, and herbalists and foodies. A brilliant gift for those wanting to start a new hobby or learn more about foraging and cooking. With events every weekend through the year, they are ideal for birthday surprises or a fun day out!
During the course you will be foraging alongside our experts; Megan, Guy, Lucy and Tim who give a different perspective from their different fields of study in addition to the culinary focus on plants and fungi.
The course will start at 10:30am for a safety talk and overview. We will then head out into the wild to collect ingredients and be taught how to safely identify common edible plants, and their toxic lookalikes. Then learn how to prepare the different wild foods collected, find out which flavours pair best together and how to highlight the more desirable flavours while enjoying the food we prepare along the way with wild drink pairings. The course usually finishes around 4:30pm. A detailed email will be sent to you the next day recapping what we found, recipes for the wild food and a reminder of what we made in the workshop.
After this workshop you should leave with new skills and a confidence in creating your own unique recipes around foraged ingredients. As there is a culinary course for each season, the recipes and ingredients will be season dependent and always changing so you can choose which one resonates with you more from delicate spring wildflowers to cosy autumnal mushrooms and hearty winter berries.
LOCATION: Our courses are based in South Downs National Park in West Sussex, Surrey and Hampshire. The exact location will be emailed to you 2 days prior.
