Chocolate how it should be made
After being a pastry chef for years I decided to dedicate my time to my favorite ingredient : the CHOCOLATE.
During the planning of my chocolate business I started to focus on the sourcing of my main ingredient, the chocolate itself. Chocolatier get their chocolate already made and turn them into confections, while doing my researches to find good (ethical & delicious) chocolate to work with it hit me, why not making my own. This is how I became a chocolate maker and created Terre de Sienne, a Bean to Bar micro batch chocolate factory.
My handcrafted chocolate bars are made in West Sussex with ethical ingredients, without additives nor preservatives.
The ingredient list is kept to a minimum, for the dark chocolate I only use 3 ingredients : cacao nibs, cacao butter and cane sugar.
I am using organic and fairly traded cacao beans, which allow farmers to get a fair wage. After receiving the dried raw cacao beans I carefully turn them into chocolate bars, and wrap them in plastic free packaging.
