The beautiful Medlar tree is thought to have been brought to Britain by the Romans. The distinctive fruits were very popular but declined in popularity after the Victorian era and are now seldom seen.
Medlars have an unusual ripening habit, remaining quite hard and inedible until they start to decay. They need to be harvested in late November, then left in a box until they turn a dark reddish brown and become soft and juicy. This ripening process allows the fruit to develop a delicious caramel flavour and is known as "bletting" the medlars.
