PINK OYSTER MUSHROOMS: Pink oyster mushrooms (Pleurotus Djamor) have delicate, vibrant caps with a vibrant colour and nutrients that are considered to improve metabolic function, immune function and heart health.

BLUE-GREY OYSTER MUSHROOMS: Depending on the fruiting temperature, Pleurotus ostreatus mushrooms can appear blue or grey. Grow mushrooms to the colour you like best - enter the fruiting stage at a low temperature for the mushrooms to appear blue and at a high temperature for the mushrooms to appear grey!

GOLDEN OYSTER MUSHROOMS: Pleurotus citrinopileautus and is a beautiful mushroom to cook gourmet meals with, once sautéed with a little salt these have a divine and unique flavour that will be worth the wait!

WHITE ELM: A North American variety (Pleurotus ostreatus var. florida) with a strong woody flavour that is great for eating, making an excellent addition to any soup or stir fry.

Required fruiting temperatures for each variety:

• Golden: 17-22 oC
• Pink: 20-28oC
• Elm: 17-22oC
• Blue-Grey: 10-18oC
