This lemon cream dessert was created by chef Enrico Derflingher for the then Prince of Wales, now King Charles III, on one of the Shetland Islands. It was created out of necessity because of a scarcity of ingredients. The Prince liked it so much it became his favourite and he requested that the Italian chef prepare it at formal events at Kensington Palace so we decided to use all the ingredients including lemon, cream and vanilla to bring this to life as a one-off.
